Our Story
Learn more about how we began
Brasserie Uno is a casual fine dining restaurant in the Swiss ski resort of Zermatt. It was named after the owner’s grandfather, Uno, and the warm, inviting interior features many personal items from Uno himself, including the Axevalla Pilsner sign from the brewery where he worked in Sweden in the 1950s, his typewriter, skis and more.
The Brasserie Uno collaborative kitchen is helmed by our talented head chef Luis Romo, along with chef Tommaso Guardascione, who create international dishes that come alive with fresh flavours and inventive ideas. We only use the finest ingredients that are regional and seasonal when possible, and in the warmer months we use produce grown in our gardens or forage wild ingredients from the local forest in our beautiful village to add to our dishes. We use bio (organic) products when available and our team, including Luis, Tommaso and owner Andreas Alm, are proud to offer inspiring vegan and vegetarian dishes alongside Swiss meat and fish dishes. We are a minimal food-waste restaurant and any food waste that is incurred is recycled into energy that powers the village.

Who is Uno?
Discover the man who inspired Brasserie Uno
During a road trip through Sweden and Norway in the summer of 2018, I was thinking a lot about what to call the restaurant. I’d had lots of ideas but none of them worked, then one day the name came to me: Brasserie Uno. Uno was the name of my grandfather and naming the restaurant after him just felt right.

Open Tuesday-Saturday for dinner only, closed Sunday & Monday.
Last seating at 19.15.
Apologies but we do not offer à la carte or offer a children’s menu.
We are a very small restaurant with an open kitchen so unfortunately we do not accept bookings for tables larger than 6. We also do no split groups over separate tables or permit dogs.
We require allergy and dietary restrictions 24 hours in advance and cannot accommodate requests on the night*.

About our menu…
Our surprise small-plate degustation menu changes with the seasons and availability of products, which is why you won’t find our menu online. We use regional and seasonal products when possible and always use the highest-quality ingredients from trusted producers. We are a minimum food waste restaurant and believe in environmental and human sustainability.
For vegan and vegetarian tasting menus, allergy or dietary restrictions, please inform us at least 24 hours prior to your booking. Apologies but because we cook-to-reservation, we cannot accommodate food requests on the night. If possible, the vegetarian option will be served.

Exquisite experience! My evening at Brasserie Uno was completely wonderful and stands out as my favorite meal of my recent trip to Switzerland. I did the tasting menu with the wine pairing; the dishes were delicious, inventive, and thoughtfully presented, and the wines were well chosen. The restaurant is beautifully decorated — a warm, welcoming, stylish environment (and the playlist was superb.) Service was friendly and attentive, and I loved chatting with the owners. A perfect evening!

Our first night in Zermatt and we discovered this incredible restaurant. It had many positive reviews but our experience surpassed the most positive of those we read. The unique offerings were all amazing and the portions were perfect so as not get overly full. The pace of each offering was also perfect so we could enjoy each one along with enjoying our bottle of wine. Their wine list provided many excellent possibilities at reasonable prices. Upon reflection, we felt that their food was as good as we’ve ever experienced around the world. If in Zermatt, do not miss this gem. Cheers!

It was near enough to a full moon. The village was twinkling. We’d been told it was a great restaurant and it was on one our parties “to do” list for Zermatt. Then we walked past it and it was very inviting. So we booked it for the following night. Well, we just left and what a meal it was! It’s hard to describe. Because though you recognise beetroot, potato, artichoke, anchovies, mushrooms etc – it is the alchemy of what happens next that makes it something ethereal. I’m very glad we let Andreas order for us. And, as I love perfumes, the added sideshow of guessing the scents inside bottles dropped to the table kept us well entertained between courses. This is a thumbs up wow factor restaurant.

Phenomenal experience, exceptional cuisine… My wife and I discovered this gem of a restaurant while looking for something a bit different for our last night in Zermatt. We’d been to a few of the more prominent restaurants along Bahnhofstrasse, but none of them came close to matching our experience here at Brasserie Uno. From the first course to the last the food was unbelievable – my wife says the “Burrata, Beet Root, Black Garlic” starter was the best course she has ever had. The restaurant itself is incredible with two rock-star chefs working the small kitchen in tandem , and the owner himself providing service in the small dining room. We were able to make same-day reservations, but we can’t imagine that will be possible for long – tables were limited, and the food was extraordinary.

I’m traveling here and searched on Yelp for restaurant, didn’t find anything special. And then I found this place, the vegan soup with beautiful green attracted me, but it had only one review so I didn’t give it high expectation, just a casual try. BUT!!! This is a really AMAZING place! It is a MUST TRY place! When I entered the restaurant, I was just so into it’s descriptions it’s so elegant, I just felt right! So I ordered the tasting menu, and it came with so many courses eventually! I was so full, but every dish is so amazing that I just wanted to try them all and can’t stop. This is one of my favorite restaurants in my lifetime. Give it a try and you won’t be disappointed!!!!!!!!

Top ! Je trouve qu’on mange bien à Zermatt en général. Et à la brasserie Uno c’était encore mieux. Avec de très bons produits ( chose rare en Suisse ) une carte ni trop longue ni trop prétentieuse… plus une équipe et un cadre sympa. Bref on s’est régalé entrée plat et dessert. Je recommande et c’est pas souvent…

Excellent place. I would eat here every night if I could. They have a very creative menu to suit vegans, vegetarians and meat eaters. I had a hard timing choosing. I settled on the kohlrabi carpaccio with chanterelles and blueberries for an appetizer. Absolutely delicious. I wish I knew how to prepare kohlrabi like this. My partner had the burrata and tomato salad, which he didn’t want to share because it was so good. For an entree I had the vegan “meatballs” served with mashed potatoes topped with lingon berries and some kind of light soy-like gravy. It was wonderful and huge portion, but I ate the whole thing because I didn’t want it to go to waste. My partner had the orecchiette of the day, which was with mushrooms and a light sauce. Also delicious. I wish I could import this place back home. Highly recommend trying it.

Genuinely innovative food, fantastic ambiance, fun people – this restaurant is absolutely brilliant! Lots of specials and a chef who knows how to create taste, texture and colour combinations that you wonder, ‘does that work’ and then find that, yes, it’s absolutely amazing.
